Ingredients
– 2 medium Gala apples, thinly sliced
– 4 ounces creamy goat cheese
– 4 croissants, sliced in half lengthwise
– 1 tablespoon unsalted butter, softened
– 1/4 teaspoon ground cinnamon
Instructions
1. Preheat oven to 350°F.
2. Spread the softened butter evenly on the cut sides of the croissants.
3. Layer the apple slices and goat cheese evenly on the bottom halves of the croissants.
4. Sprinkle the cinnamon over the apple and goat cheese layers.
5. Place the croissant sandwiches on a baking sheet and bake for 10-12 minutes, until the croissants are golden brown and the cheese is melted.
6. Remove from oven, top with the remaining croissant halves, and serve warm.
Notes
For a sweeter version, you can drizzle a bit of honey over the goat cheese before assembling the sandwiches. Sliced almonds or walnuts also make a nice addition.
