Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 1/2 cup mayonnaise
– 2 tablespoons Sriracha
– 2 tablespoons honey
– 1 tablespoon rice vinegar
– 2 cloves garlic, minced
– 3 cups cooked white rice
– 2 green onions, sliced
– 1 tablespoon toasted sesame seeds
Instructions
1. In a large bowl, combine the chicken, mayonnaise, Sriracha, honey, and rice vinegar. Toss to coat the chicken evenly.
2. Heat a large skillet over medium-high heat. Add the chicken mixture and cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through.
3. Serve the Bang Bang chicken over the cooked white rice. Garnish with sliced green onions and toasted sesame seeds.
Notes
For a spicier version, add an extra tablespoon of Sriracha. You can also use Greek yogurt instead of mayonnaise for a healthier option.
