Ingredients

– 3 medium-sized beetroots, peeled and cubed

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tablespoons olive oil

– 1 cup vegetable broth

– 1/2 cup heavy cream

– 1 teaspoon dried basil

– 1/2 teaspoon dried oregano

– Salt and pepper to taste


Instructions

1. Preheat your oven to 400°F (200°C).

2. Toss the cubed beetroots with 1 tablespoon of olive oil and spread them on a baking sheet. Roast for 20-25 minutes, or until the beetroots are tender and caramelized.

3. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 5 minutes, or until translucent.

4. Add the minced garlic to the skillet and cook for an additional minute, until fragrant.

5. Transfer the roasted beetroots and the onion-garlic mixture to a blender or food processor. Add the vegetable broth, heavy cream, dried basil, and dried oregano. Blend until the sauce is smooth and creamy.

6. Season with salt and pepper to taste.

7. Serve the Beetroot Pasta Sauce warm over your favorite pasta. Enjoy!

– For a thicker sauce, add an extra 1/4 cup of heavy cream.
