Description

Ingredients

– 2 cups all-purpose flour

– 1/2 cup unsweetened cocoa powder

– 1 teaspoon baking soda

– 1/4 teaspoon salt

– 1 cup unsalted butter, softened

– 1 1/2 cups granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 2-3 tablespoons blue food coloring

– 1/4 cup powdered sugar, for dusting


Instructions

1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

3. In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla and food coloring until the batter is a vibrant blue color.

4. Gradually mix the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

5. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

6. Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

7. Dust the cooled cookies with powdered sugar before serving.

Notes

For a deeper blue color, add an extra tablespoon or two of food coloring. Store the cookies in an airtight container at room temperature for up to 5 days.
