Ingredients
– 2 tablespoons unsalted butter
– 1 medium yellow onion, diced
– 3 cloves garlic, minced
– 4 cups low-sodium chicken broth
– 3 cups broccoli florets
– 2 cups shredded cheddar cheese, plus more for garnish
– 1 cup heavy cream
– 1 teaspoon salt
– 1/2 teaspoon black pepper
Instructions
1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté for 5-7 minutes until the onion is translucent.
2. Pour in the chicken broth and add the broccoli florets. Bring the mixture to a boil, then reduce heat and simmer for 12-15 minutes, until the broccoli is tender.
3. Using an immersion blender, carefully blend the soup until it reaches a creamy, smooth consistency. Alternatively, transfer the soup to a blender in batches and blend until smooth.
4. Stir in the shredded cheddar cheese and heavy cream. Season with salt and pepper.
5. Continue cooking for 5-10 minutes, stirring occasionally, until the cheese is melted and the soup is heated through.
6. Serve the broccoli cheddar soup hot, garnished with additional shredded cheddar cheese, if desired. Enjoy with crusty bread.
Notes
For a thicker soup, you can add an extra 1/2 cup of heavy cream or puree a portion of the cooked broccoli before adding it back to the pot. This soup also reheats beautifully and can be stored in the refrigerator for up to 4 days.
