Ingredients

– 1 cup dry white wine

– 1 garlic clove, minced

– 1 pound Swiss cheese, grated

– 1 pound Gruyère cheese, grated

– 2 tablespoons cornstarch

– 1 teaspoon Dijon mustard

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon white pepper


Instructions

1. In a large, heavy-bottomed saucepan, bring the white wine and garlic to a gentle simmer over medium heat.

2. In a separate bowl, toss the grated Swiss and Gruyère cheeses with the cornstarch until well coated.

3. Gradually add the cheese mixture to the simmering wine, stirring constantly with a wooden spoon or whisk. Continue stirring until the cheese is fully melted and the fondue is smooth and creamy, about 5-7 minutes.

4. Remove the fondue from the heat and stir in the Dijon mustard, nutmeg, and white pepper.

5. Transfer the fondue to a fondue pot or serving bowl and serve immediately with crusty bread, roasted vegetables, and other desired dippers.

Notes

For a thicker fondue, add an extra tablespoon of cornstarch. For a creamier texture, replace some of the Gruyère with a soft, creamy cheese like Brie or Camembert.
