Juicy, tender Chicken Kabobs are a summer grilling staple. Loaded with colorful vegetables and a simple marinade, these kabobs are easy to make and packed with flavor. Grill them up for a crowd-pleasing main dish or appetizer.
Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
– 1 red bell pepper, cut into 1-inch pieces
– 1 yellow bell pepper, cut into 1-inch pieces
– 1 red onion, cut into 1-inch pieces
– 1 zucchini, cut into 1-inch rounds
– 2 tablespoons olive oil
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
– In a large bowl, combine the cubed chicken, bell pepper pieces, onion, and zucchini.
– In a small bowl, whisk together the olive oil, oregano, garlic powder, salt, and black pepper.
– Pour the marinade over the chicken and vegetables and toss to coat evenly.
– Thread the marinated chicken and vegetables onto metal or wooden skewers, alternating the ingredients.
– Preheat a grill or grill pan to medium-high heat. Grill the kabobs for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
– Serve the Chicken Kabobs hot, garnished with fresh herbs if desired.
Notes
For best results, marinate the chicken and vegetables for at least 30 minutes before grilling. Wooden skewers should be soaked in water for 30 minutes before using to prevent burning. Experiment with different vegetable combinations or add mushrooms, pineapple, or cherry tomatoes to the kabobs.
