Ingredients
– 1 pound cheese tortellini
– 4 cups chicken broth
– 1 cup heavy cream
– 2 cloves garlic, minced
– 1 small onion, diced
– 2 tablespoons olive oil
– 1 teaspoon dried basil
– 1/2 teaspoon dried oregano
– Salt and pepper to taste
– Grated Parmesan cheese for serving (optional)
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and translucent.
3. Pour in the chicken broth and bring to a simmer.
4. Add the cheese tortellini and cook for 5-7 minutes, or until the tortellini is tender.
5. Reduce the heat to low and stir in the heavy cream. Season with dried basil, dried oregano, salt, and pepper to taste.
6. Simmer for an additional 2-3 minutes, stirring occasionally, until the soup has thickened slightly.
7. Serve hot, garnished with grated Parmesan cheese if desired.
Notes
For a thicker, creamier soup, you can blend a portion of the soup in a blender or use an immersion blender. You can also add diced cooked chicken or spinach for extra protein and veggies.
