Description
This Creamy Tuscan Chicken (One Pan) dish is a quick and easy weeknight dinner that’s bursting with flavor. Tender chicken breasts are simmered in a rich, creamy sauce with sun-dried tomatoes and fresh spinach for a restaurant-quality meal you can make at home.
Ingredients
– 1 pound boneless, skinless chicken breasts, cubed
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup grated parmesan cheese
– 1/2 cup sun-dried tomatoes, chopped
– 2 cups fresh spinach, roughly chopped
– 1 teaspoon dried oregano
– 1/2 teaspoon dried basil
– Salt and pepper to taste
Instructions
1. Heat the olive oil in a large skillet over medium-high heat. Add the cubed chicken and season with salt and pepper. Cook for 5-7 minutes, until the chicken is lightly browned on all sides.
2. Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
3. Pour in the heavy cream and stir to combine. Bring the mixture to a simmer and let it cook for 2-3 minutes, until slightly thickened.
4. Stir in the grated parmesan cheese, chopped sun-dried tomatoes, and chopped spinach. Season with oregano, basil, and additional salt and pepper to taste.
5. Simmer the sauce for 5-7 minutes, until the spinach is wilted and the sauce has thickened to your desired consistency.
6. Serve the Creamy Tuscan Chicken (One Pan) immediately, over pasta, rice, or with crusty bread.
Notes
For a creamier sauce, you can add an extra 1/4 cup of heavy cream. You can also substitute fresh basil for the dried basil, if desired.
