Ingredients
– 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
– 1 cup plain Greek yogurt
– 1 cucumber, peeled, seeded, and grated
– 3 cloves garlic, minced
– 2 tablespoons chopped fresh dill
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup uncooked long-grain white rice
– 1 1/2 cups chicken broth
Instructions
1. Preheat oven to 400°F. Grease a 9×13 inch baking dish.
2. In a medium bowl, stir together the yogurt, grated cucumber, garlic, dill, oregano, salt, and pepper.
3. Place the cubed chicken in the prepared baking dish. Pour the yogurt mixture over the chicken and stir to coat.
4. Spread the rice in an even layer in the baking dish. Pour the chicken broth over the rice.
5. Bake for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
6. Remove from oven and let stand for 5 minutes before serving.
Notes
For extra flavor, you can add a squeeze of lemon juice or a sprinkle of additional fresh dill over the top before serving.
