Description

This Fajita Chicken Casserole is a comforting and delicious one-dish meal that’s packed with Tex-Mex flavors. Tender chicken, colorful bell peppers, and a creamy, cheesy sauce come together to create a family-friendly dish that’s perfect for busy weeknights or casual gatherings.


Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 red bell pepper, sliced

– 1 green bell pepper, sliced

– 1 yellow onion, diced

– 2 cloves garlic, minced

– 1 tablespoon chili powder

– 1 teaspoon cumin

– 1 teaspoon paprika

– 1/2 teaspoon oregano

– 1/4 teaspoon cayenne pepper (optional)

– 1 cup sour cream

– 1 cup shredded Monterey Jack cheese

– 1 cup shredded cheddar cheese

– Salt and black pepper, to taste


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large skillet, sauté the chicken over medium-high heat until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

3. In the same skillet, sauté the bell peppers and onion until softened, about 5 minutes. Add the garlic and cook for an additional minute, until fragrant.

4. In a large bowl, combine the cooked chicken, sautéed vegetables, chili powder, cumin, paprika, oregano, and cayenne (if using). Stir to coat the ingredients evenly.

5. Spread the chicken and vegetable mixture into a 9×13 inch baking dish. Top with the sour cream and shredded cheeses.

6. Bake the casserole for 20-25 minutes, or until the cheese is melted and bubbly.

7. Remove the casserole from the oven and let it cool for 5 minutes before serving.

Notes

This Fajita Chicken Casserole can be made in advance and refrigerated or frozen for later use. If freezing, thaw in the refrigerator overnight before baking. You can also customize the spice level by adjusting the amount of cayenne pepper. Serve with warm tortillas, rice, or a fresh salad for a complete Tex-Mex-inspired meal.
