Description

Savor the perfect balance of a buttery, crisp sugar cookie crust and a vibrant array of fresh berries and fruit in this delightful Fruit Pizza. It’s a quick and easy dessert that’s perfect for parties, picnics, or any occasion.


Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 2 cups mixed fresh berries (such as strawberries, blueberries, raspberries)

– 1 kiwi, peeled and sliced

– 1/4 cup apricot preserves or honey, for glaze


Instructions

1. Preheat the oven to 350°F (175°C). Grease a 12-inch round pizza pan or baking sheet.

2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla.

3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

4. Press the dough evenly into the prepared pan, creating a slight lip around the edges.

5. Bake for 18-20 minutes, or until the crust is golden brown. Allow to cool completely.

6. Arrange the fresh berries and kiwi slices in a decorative pattern on top of the cooled cookie crust.

7. In a small saucepan, heat the apricot preserves or honey over low heat until warm and pourable. Drizzle the glaze over the fruit.

8. Refrigerate the fruit pizza for at least 30 minutes before serving to allow the glaze to set.

Notes

For a variation, you can use other fresh fruits such as pineapple, mandarin oranges, or grapes. The sugar cookie crust can also be made ahead of time and stored in the refrigerator or freezer until ready to assemble the fruit pizza.
