Ingredients
– 6 chicken thighs, bone-in and skin-on
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon smoked paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 lemon, cut into wedges
Instructions
1. Pat the chicken thighs dry with paper towels and place them in a large bowl.
2. In a small bowl, mix together the olive oil, garlic powder, smoked paprika, salt, and pepper. Pour the seasoning mixture over the chicken thighs and toss to coat evenly.
3. Preheat your grill to medium-high heat, about 400°F.
4. Place the chicken thighs skin-side down on the grill and cook for 5-7 minutes, or until the skin is crispy and golden brown.
5. Flip the chicken thighs and continue grilling for another 10-12 minutes, or until the internal temperature reaches 165°F.
6. Transfer the grilled chicken thighs to a serving platter and serve with lemon wedges.
Notes
For best results, let the chicken thighs sit at room temperature for 30 minutes before grilling. This helps them cook more evenly. You can also marinate the chicken in the seasoning mixture for up to 24 hours in the refrigerator for even more flavor.
