Ingredients

1 pound ham, diced

2 cans (15 oz each) navy beans, drained and rinsed

1 onion, diced

2 carrots, peeled and diced

2 celery stalks, diced

3 garlic cloves, minced

4 cups low-sodium chicken broth

1 teaspoon dried thyme

1/2 teaspoon dried oregano

Salt and black pepper to taste


Instructions

1. In a large pot or Dutch oven, sauté the diced ham over medium heat until lightly browned, about 5 minutes.

2. Add the diced onion, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. Stir in the minced garlic and cook for 1 minute until fragrant.

4. Add the drained and rinsed navy beans, chicken broth, dried thyme, and dried oregano. Season with salt and black pepper to taste.

5. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, until the flavors have melded and the soup has thickened slightly.

Notes

For a creamier texture, you can blend or mash some of the beans before adding them back to the soup. Adjust seasoning to your taste.
