Description

Ingredients

– 1 (4-5 pound) whole chicken

– 2 tablespoons olive oil

– 2 tablespoons fresh thyme, chopped

– 2 tablespoons fresh rosemary, chopped

– 3 cloves garlic, minced

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 1 lemon, sliced


Instructions

1. Preheat the oven to 425°F (220°C).

2. Pat the chicken dry with paper towels and place it in a large roasting pan.

3. In a small bowl, combine the olive oil, thyme, rosemary, garlic, salt, and pepper. Rub the seasoning mixture all over the chicken, including under the skin and in the cavity.

4. Arrange the lemon slices around the chicken in the roasting pan.

5. Roast the chicken for 30-35 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the breast.

6. Let the chicken rest for 10 minutes before carving and serving.

Notes

For extra crispy skin, you can broil the chicken for the last 2-3 minutes of cooking. Adjust the roasting time based on the size of your chicken. Serve with your favorite roasted vegetables for a complete meal.
