Ingredients
– 2 cups all-purpose flour
– 1 tablespoon baking powder
– 1 teaspoon salt
– 2 tablespoons granulated sugar
– 1 cup milk
– 2 eggs
– 4 tablespoons unsalted butter, melted
– 8 slices bacon, cooked and crumbled
– 8 slices cheddar cheese
Instructions
1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin.
2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
3. In a separate bowl, beat the milk and eggs together. Then, stir in the melted butter.
4. Pour the wet ingredients into the dry ingredients and mix just until combined, being careful not to overmix.
5. Spoon the batter evenly into the prepared muffin cups, filling them about 3/4 full.
6. Sprinkle the crumbled bacon on top of each muffin, then top with a slice of cheddar cheese.
7. Bake for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
8. Allow the muffins to cool for 5 minutes before removing them from the tin. Serve warm and enjoy!
Notes
For extra flavor, try adding a pinch of garlic powder or onion powder to the muffin batter. You can also experiment with different cheese varieties, such as pepper jack or Monterey Jack.
