Description

Tender, juicy chicken breasts coated in a delectable honey-chipotle glaze that’s sweet, smoky, and slightly spicy. This easy 30-minute recipe is perfect for a quick weeknight dinner.

Ingredients

– 1.5 pounds boneless, skinless chicken breasts

– 1/4 cup honey

– 2 tablespoons chipotle peppers in adobo sauce, finely chopped

– 2 cloves garlic, minced

– 1 tablespoon olive oil

– 1 tablespoon lime juice

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. In a large bowl, combine the honey, chipotle peppers, garlic, lime juice, salt, and pepper. Add the chicken breasts and toss to coat.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until cooked through.

3. Reduce heat to low and pour the remaining honey-chipotle sauce over the chicken. Let simmer for 2-3 minutes, basting the chicken, until the sauce thickens.

4. Serve the Honey Chipotle Chicken immediately, garnished with fresh cilantro if desired. Enjoy!

Notes

This dish pairs well with rice, roasted vegetables, or a fresh salad. For extra heat, add an additional 1-2 tablespoons of chopped chipotle peppers. Leftover chicken can be stored in an airtight container in the refrigerator for 3-4 days.
