Description

Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 4 garlic cloves, minced

– 6 cups chicken broth

– 2 cups shredded cooked chicken

– 1 can (15 oz) diced tomatoes

– 2 bay leaves

– 1 teaspoon dried oregano

– 1/2 teaspoon dried thyme

– Salt and pepper to taste

– Fresh parsley, for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.

3. Stir in the garlic and cook for 1 minute, until fragrant.

4. Pour in the chicken broth, diced tomatoes, bay leaves, oregano, and thyme. Bring the mixture to a boil.

5. Reduce the heat and let the soup simmer for 15-20 minutes, until the vegetables are tender.
