Ingredients
– 2 (15 oz) cans kidney beans, drained and rinsed
– 1 (15 oz) can garbanzo beans, drained and rinsed
– 1/2 cup chopped fresh cilantro
– 2 tablespoons olive oil
– 2 tablespoons lime juice (about 1 lime)
– 1 teaspoon lime zest
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the drained and rinsed kidney beans and garbanzo beans.
2. In a small bowl, whisk together the olive oil, lime juice, lime zest, salt, and black pepper.
3. Pour the dressing over the beans and toss to coat evenly.
4. Stir in the chopped cilantro until well combined.
5. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
6. Serve chilled or at room temperature.
Notes
This salad can be made a day in advance for the flavors to develop further. For a heartier meal, you can add cooked quinoa or farro. This recipe is also delicious with the addition of diced avocado or crumbled feta cheese.
