Description

Ingredients

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 cloves garlic, minced

– 2 carrots, peeled and sliced

– 2 celery stalks, sliced

– 1 pound potatoes, peeled and cubed

– 1 cup mushrooms, sliced

– 4 cups vegetable broth

– 1 teaspoon dried thyme

– 1 teaspoon dried rosemary

– 1 bay leaf

– Salt and pepper to taste

– 1/2 cup heavy cream (optional)

– Chopped parsley for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 5 minutes, until translucent.

3. Stir in the minced garlic and sauté for an additional minute.

4. Add the sliced carrots, celery, cubed potatoes, and sliced mushrooms. Cook for 10 minutes, stirring occasionally.

6. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
