Ingredients
– 2 cups all-purpose flour
– 1 teaspoon salt
– 1 tablespoon granulated sugar
– 1 packet (2 1/4 teaspoons) active dry yeast
– 3/4 cup warm milk
– 1/4 cup warm water
– 2 tablespoons unsalted butter, melted
– Vegetable oil for frying
– Powdered sugar for dusting
Instructions
1. In a large bowl, whisk together the flour, salt, sugar, and yeast.
2. Add the warm milk, warm water, and melted butter. Stir until a shaggy dough forms.
3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
4. Place the dough in a lightly greased bowl, cover, and let rise for 1 hour or until doubled in size.
5. Punch down the dough to release air bubbles. On a lightly floured surface, roll the dough out to 1/4-inch thickness.
6. Cut the dough into 2-inch squares using a sharp knife or biscuit cutter.
7. In a large heavy-bottomed pot or Dutch oven, heat 2-3 inches of vegetable oil to 350°F.
8. Fry the beignets for 2-3 minutes per side, or until golden brown. Drain on a paper towel-lined plate.
9. Generously dust the hot beignets with powdered sugar and serve immediately.
Notes
For best results, serve the beignets warm, fresh from the fryer. Leftover beignets can be reheated in the oven at 350°F for 5-7 minutes to restore their crisp texture.
