Description

This Pesto Caprese Press is a quick and easy homemade sandwich that combines the fresh flavors of basil pesto, creamy mozzarella, and juicy tomatoes. It’s perfect for a light lunch, appetizer, or snack.


Ingredients

– 8 slices ciabatta bread

– 1 cup fresh basil pesto

– 8 ounces fresh mozzarella cheese, sliced

– 2 medium tomatoes, sliced

– 2 tablespoons olive oil

– Salt and pepper to taste


Instructions

1. Preheat a grill or panini press to medium-high heat.

2. Spread the basil pesto evenly on one side of each slice of ciabatta bread.

3. Layer the mozzarella cheese and tomato slices on the pesto-coated bread.

4. Brush the outside of the sandwiches with olive oil.

5. Grill or press the sandwiches for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted.

6. Remove the sandwiches from the heat and season with salt and pepper to taste.

7. Slice the sandwiches in half and serve warm.

Notes

For a richer flavor, you can use sun-dried tomato pesto instead of traditional basil pesto. You can also add a drizzle of balsamic glaze or a few fresh basil leaves as a garnish.
