Description

This Shaved Rainbow Carrot Sesame Salad is a vibrant, crunchy, and flavorful side dish that’s ready in just 30 minutes. Thinly sliced rainbow carrots are tossed in a delicious sesame-ginger dressing for a refreshing and healthy accompaniment to any meal.


Ingredients

– 1 pound rainbow carrots, peeled and shaved into thin strips

– 2 tablespoons sesame seeds

– 1 tablespoon sesame oil

– 1 tablespoon rice vinegar

– 1 tablespoon lime juice

– 1 teaspoon grated ginger

– 1 clove garlic, minced

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. In a large bowl, combine the shaved rainbow carrots and sesame seeds.

2. In a small bowl, whisk together the sesame oil, rice vinegar, lime juice, grated ginger, minced garlic, salt, and black pepper.

3. Pour the dressing over the carrot mixture and toss to coat evenly.
