Ingredients
– 1 pound large shrimp, peeled and deveined
– 4 ounces andouille sausage, diced
– 1 red bell pepper, diced
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tablespoons Cajun seasoning
– 2 tablespoons unsalted butter
– 1 cup uncooked grits
– 4 cups chicken broth
– Salt and black pepper to taste
– Chopped green onions for garnish
Instructions
1. In a large skillet, cook the andouille sausage over medium-high heat until lightly browned, about 3-4 minutes.
2. Add the bell pepper, onion, and garlic to the skillet. Sauté for 5-7 minutes, until the vegetables are softened.
3. Add the shrimp and Cajun seasoning to the skillet. Cook for 3-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.
4. In a separate saucepan, bring the chicken broth to a boil. Gradually whisk in the grits, reduce heat to low, and cook for 15-20 minutes, stirring frequently, until the grits are creamy and tender.
5. Remove the grits from heat and stir in the butter. Season with salt and black pepper to taste.
6. Serve the Cajun Shrimp over the creamy grits, garnished with chopped green onions.
Notes
For a creamier texture, add an extra splash of chicken broth or milk to the grits. You can also substitute smoked sausage or chorizo for the andouille sausage.
