Ingredients
– 1 pound large shrimp, peeled and deveined
– 4 tablespoons unsalted butter
– 3 cloves garlic, minced
– 1/4 cup dry white wine
– 2 tablespoons freshly squeezed lemon juice
– 1/4 cup chopped fresh parsley
– 1/4 teaspoon red pepper flakes (optional)
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 8 ounces linguine pasta, cooked according to package instructions
Instructions
1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.
2. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until the shrimp are pink and opaque.
4. Pour in the white wine and lemon juice. Bring the mixture to a simmer and cook for 2-3 minutes, until the sauce has slightly thickened.
5. Remove the skillet from the heat and stir in the chopped parsley, red pepper flakes (if using), salt, and black pepper.
6. Serve the shrimp scampi immediately over the cooked linguine pasta. Enjoy!
