Description

Sichuan dry fried green beans are a quick and flavorful side dish that brings the heat. Crispy, spicy, and full of bold Sichuan flavors, this easy recipe is ready in just 20 minutes.


Ingredients

– 1 pound fresh green beans, trimmed and cut into 2-inch pieces

– 2 tablespoons vegetable oil

– 3 cloves garlic, minced

– 1 tablespoon grated ginger

– 2 tablespoons soy sauce

– 1 tablespoon chili oil (or to taste)

– 1 teaspoon sesame oil

– 1/2 teaspoon white sugar

– Salt and white pepper, to taste


Instructions

1. Trim the green beans and cut into 2-inch pieces.

2. Heat the vegetable oil in a large skillet or wok over high heat.

3. Add the green beans and stir-fry for 3-4 minutes, until starting to blister and char.

4. Add the garlic and ginger and continue stir-frying for 1 minute, until fragrant.

5. Drizzle in the soy sauce, chili oil, sesame oil, and sugar. Toss to coat the beans evenly.

6. Season with salt and white pepper to taste.

7. Serve the Sichuan dry fried green beans hot, garnished with extra chili peppers if desired.

Notes

For extra crunch, you can fry the green beans in batches. Adjust the chili oil to your desired spice level. Leftovers will keep in the fridge for up to 3 days.
