Ingredients
– 6 bone-in, skin-on chicken thighs
– 2 tablespoons smoked paprika
– 1 tablespoon brown sugar
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons olive oil
Instructions
1. Pat the chicken thighs dry with paper towels and place them in a large bowl.
2. In a small bowl, combine the smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Rub the seasoning mixture all over the chicken thighs, making sure to coat them evenly.
3. Preheat your smoker to 225°F (107°C). If using a charcoal grill, set up for indirect heat.
4. Brush the chicken thighs with olive oil and place them on the smoker or grill grate, skin-side up.
5. Smoke the chicken for 1 to 1 1/2 hours, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the thigh.
6. Remove the smoked chicken thighs from the smoker or grill and let them rest for 5-10 minutes before serving.
Notes
For extra crispy skin, you can broil the smoked chicken thighs for 2-3 minutes after they’ve rested. This will help the skin get extra crispy and golden brown.
