Description

Sopa de Ajo (Spanish Garlic Soup) is a simple, comforting dish that’s bursting with the rich, aromatic flavors of garlic, olive oil, and bread. This traditional recipe is easy to make and sure to warm your soul on a chilly day.


Ingredients

– 1/2 cup olive oil

– 12 cloves garlic, thinly sliced

– 4 cups chicken or vegetable broth

– 4 cups cubed day-old bread

– 2 eggs, beaten

– 1/4 cup grated Parmesan cheese

– 2 tablespoons chopped fresh parsley

– Salt and pepper to taste


Instructions

1. In a large saucepan, heat the olive oil over medium heat.

2. Add the sliced garlic and cook, stirring frequently, until golden brown, about 3-5 minutes.

3. Carefully pour in the broth and bring to a simmer.

4. Add the cubed bread and stir gently to submerge it in the broth.

5. Simmer for 5-7 minutes, until the bread has softened.

6. Remove the pan from the heat and stir in the beaten eggs, Parmesan cheese, and parsley.

7. Season with salt and pepper to taste.

8. Serve the Sopa de Ajo (Spanish Garlic Soup) hot, garnished with additional parsley if desired.

Notes

For a thicker soup, add more bread. For a lighter soup, add more broth. This dish can be made vegetarian by using vegetable broth instead of chicken.
