Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup chopped fresh strawberries
– 1 cup semisweet chocolate chips, melted
Instructions
1. Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped strawberries.
5. Scoop the dough by the tablespoonful onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 12-14 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
7. Once the cookies are cooled, drizzle the melted chocolate over the top of each cookie, allowing it to drip down the sides.
8. Refrigerate the cookies for at least 30 minutes to allow the chocolate to set.
