Ingredients
– 1 pound cremini mushrooms, sliced
– 3 cloves garlic, minced
– 2 tablespoons unsalted butter
– 2 tablespoons all-purpose flour
– 1 cup whole milk
– 1 cup heavy cream
– 1 cup shredded Gruyere cheese
– 2 tablespoons truffle oil
– 1 teaspoon fresh thyme leaves, plus more for garnish
– Salt and black pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, melt the butter over medium-high heat. Add the sliced mushrooms and garlic, and sauté until the mushrooms are tender and lightly browned, about 5-7 minutes.
3. Sprinkle the flour over the mushroom mixture and stir to coat. Cook for 1-2 minutes, stirring constantly, to cook off the raw flour taste.
4. Gradually whisk in the milk and heavy cream. Bring the mixture to a simmer and cook, stirring occasionally, until thickened, about 5 minutes.
5. Remove the pan from the heat and stir in the Gruyere cheese, truffle oil, and fresh thyme. Season with salt and black pepper to taste.
6. Transfer the mushroom and cheese mixture to a baking dish and smooth the top.
7. Bake for 20-25 minutes, or until the top is golden brown and bubbly.
8. Garnish with additional fresh thyme leaves before serving.
