Indulge in a comforting and guilt-free version of the classic Shepherd’s Pie, made with savory lentils instead of ground meat. This Vegetarian Shepherd’s Pie features a flavorful lentil-based filling and a creamy mashed potato topping that’s sure to satisfy your cravings.
Ingredients
– 1 cup brown lentils, rinsed
– 3 cups vegetable broth
– 1 tablespoon olive oil
– 1 onion, diced
– 2 carrots, diced
– 2 stalks celery, diced
– 3 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1/2 teaspoon smoked paprika
– Salt and black pepper, to taste
– 3 pounds russet potatoes, peeled and cut into 1-inch cubes
– 1/2 cup unsweetened almond milk
– 2 tablespoons vegan butter
– Chopped fresh parsley, for garnish
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender. Drain any excess liquid and set aside.
3. In a large skillet, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 8-10 minutes, or until the vegetables are softened.
4. Add the garlic, thyme, rosemary, and smoked paprika to the skillet. Cook for 1-2 minutes, or until fragrant.
5. Stir in the cooked lentils and season with salt and black pepper to taste.
6. In a large pot, cover the cubed potatoes with water and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the potatoes are tender. Drain the potatoes and return them to the pot.
7. Add the almond milk and vegan butter to the potatoes, and mash until smooth and creamy.
8. Spread the lentil mixture into a 9×13-inch baking dish. Top with the mashed potatoes, smoothing the surface with a fork.
9. Bake for 25-30 minutes, or until the top is golden brown.
10. Remove from the oven and let cool for 5-10 minutes. Garnish with chopped fresh parsley before serving.
Notes
This Vegetarian Shepherd’s Pie can be made ahead of time and refrigerated or frozen for later. When ready to serve, simply reheat in the oven until heated through.
